Baked King Mackerel
2 large fillets
1 6-oz pkg Swiss Cheese
1 40oz pkg mozzarella shredded
2 tbs butter
2 tbs flour
1 cup milk
2 green onions w/tops, chopped
Salt / Pepper
Remove skin and dark streak from
fillets; place fillets in shallow baking dish. Squeeze a liberal amount
of lemon juice over fish; sprinkle with wine and Worcestershire sauce.
add salt, pepper, and milk. Make a cream sauce with the butter, flour,
salt, pepper and milk. Sauce should be smooth and thick. Place slices
of Swiss cheese over fish; cover with white sauce, then with shredded
mozzarella. sprinkle with paprika. Bake at 350 degrees for 40 minutes.
Sprinkle green onions over all for last 5 minutes of baking.
