Fried Redfish
Fillets
2 pounds flour
1 pound corn meal
1 teaspoon salt
1 teaspoon pepper
1 teaspoon bay seasoning
1 teaspoon caribbean jerk seasoning
1 teaspoon lowry's seasoning salt
1 teaspoon everglades' seasoning
1/2 teaspoon garlic powder
Mix all the above in a big plastic
baggie
Take the white of 2-6 raw eggs
(depending upon how much Redfish
you are deep frying.)
Dip the Redfish fillets in the egg whites and shake off all
excess - put in baggie of batter and make sure coated really
good.
Deep fry in peanut oil until crispy
golden brown.
Hint - usually starts to float in oil when done
