Fish with White Wine Sauce

4 lbs Scamp or Snapper fillets
1 stick butter
Juice of 1 lemon
3/4 cup sauterne
8oz Velveeta cheese
1 clove garlic, finely chopped
2 lbs shrimp, cooked

Salt fish, sprinkle with paprika, and place in a flat baking dish. In a saucepan, melt butter and combine with lemon juice. Baste fish with mixture and pour 1/2 coup of sauterne over all. Bake uncovered at 350 degrees for approx. 30 minutes or until flaky. Baste often.

In a saucepan or double boiler, place remaining sauterne and cheese. Continue stirring until cheese has melted. Add garlic and shrimp. Place fish on large platter and pour sauce over all. Garnish with parsley.
